Ingredients:
- 1 cup of celery pulp (from juicing, the pulp typically has large pieces of celery that give texture and shape to the fritters)
- 1/2 cup of fresh parsley, coarsely chopped
- 1 large egg
- 1/4 teaspoon of salt
- 1/2 teaspoon of pepper
- 3 tablespoons of coconut oil (enough to evenly coat the bottom of the pan and cover 1/3 of the fritters)
Instructions:
1. Heat the coconut oil in a pan over medium-high heat.
2. In a bowl, mix together the celery pulp, parsley, egg, salt, and pepper until well combined. Form the mixture into patties.
3. Gently place the patties into the heated coconut oil and fry for about 2 minutes or until they turn golden brown.
4. Carefully flip the fritters using a spatula and let them fry for another minute or two.
5. Remove the fritters from the pan and place them on a paper towel to absorb any excess oil.
6. Serve and enjoy!
Note: You can serve these fritters as a side dish or as a snack. They are best enjoyed when they are still warm.
